Inulinase (EC 3.2.1.7, inulase, endoinulinase, endo-inulinase, exoinulinase, 2,1-beta-D-fructan fructanohydrolase) is an enzyme with systematic name 1-beta-D-fructan fructanohydrolase.[1] This enzyme catalyses the following chemical reaction
