Tavče Gravče (Macedonian: Тавче гравче) or Fasoulotavas (Greek: Φασουλοταβάς) (English translation: beans in a skillet) is a traditional Macedonian dish. It is prepared with fresh beans and it can be found in almost all restaurants in Macedonia and all over the Greek and Macedonian diaspora. It is served in traditional Macedonian earthenware. Tavče Gravče is considered the national dish of the Republic of Macedonia.

Ingredients

Below are the ingredients for preparing the dish, but every cuisine uses other ingredients, too, and has its own method of preparation.

Preparation

The beans are cleaned and then soaked in cold water for 3 hours to become soft. After that they are boiled in a pot. After first boiling the water it is thrown out and replaced with fresh water. Then add the onion and the black pepper. Apart in a pan fry an onion together with the black pepper. When the beans are boiled put it in earthenware together with the onion and the red pepper and stir well. After that, put a lid on the earthenware and put the dish in oven to be cooked on 220 °C. During the baking you should be careful, as the beans should not become dry.

The earthenware does not just give a traditional look to the meal, but also keeps the beans warm.

The beans can be eaten with different kinds of meat.

Tavče Gravče in the Tetovo style is widely known in Macedonia.
