Bean salad, is a common North American dish, composed of various beans -- (green beans and/or yellow wax beans), cooked garbanzo beans, cooked kidney beans and typically onions or other vegetables, in a vinaigrette broth, sometimes sweetened with sugar.
History
Salads of this type have commonly been used since at least the 19th century [1] for picnics and outings, as they can be preserved with little refrigeration. It was a favorite dish of J. Edger Hoover, and it is believed that bean salad was one of the final dishes he ate before his death.
Nutrition
Consuming beans adds significant amounts of fiber and soluble fiber to a diet, with one cup of cooked beans providing between nine to thirteen grams of fiber.[2] Soluble fiber can help lower blood cholesterol.[2] Beans are also high in protein, complex carbohydrates and iron.[2]
