Sohan (Persian: سوهان, romanizedsohān) is a traditional Persian saffron brittle toffee made in Iran. Its ingredients consist of wheat sprout, flour, egg yolks, rose water, sugar, butter or vegetable oil, saffron, cardamom, and slivers of almond and pistachio.[citation needed]
