Zuma is a chain of Japanese Izakaya-style restaurants founded in 2002 by Rainer Becker and Arjun Waney. The first Zuma location opened in the Knightsbridge area of London, with a concept developed by Becker during his six years working in Tokyo, where he immersed himself in Japanese food and culture.[1] It is one of the five-starred restaurants according to the Michelin Guide.[2]
The restaurant features three kitchens: the main kitchen, the sushi counter, and the robata grill. Zuma has since expanded globally, with 14 permanent outlets and 8 seasonal locations in various cities worldwide.[3]

The restaurant was first founded in 2002 by Rainer Becker and investor Arjun Waney.[4] Zuma offers a variety of dishes and modern Japanese cuisine.[5] It has a vegan and vegetarian menu. Zuma is composed predominantly of teriyaki dishes (chicken, beef and shrimp), though it also offers bento boxes, dumplings, tempura and a variety of sushi rolls.[6] There is no set protocol on ordering from the menu; izakaya style means that dishes are designed to be shared at the table.
Outside of Japan, Zuma has outlets in London, Hong Kong, Thailand, Turkey, United Arab Emirates, United States, Italy, Austria, Spain, Maldives, France, Greece, Qatar and Germany. There are over 70 Zuma restaurants.[7]
