Kol böreği,Sarburma (also known simply as Burma in the Crimean Highlands among Tats; in Crimean sarmaq means to wrap and burmaq to curl, Ukrainian: сарбурма) is the Crimean traditional meat pie dish originating among ethnic Crimeans, currently widespread snack in Crimea.
The main ingredients are traditional for the Crimean cuisine: lamb and dough. The same are used in another very popular Crimean dish, çibereks.
Ingredients are:
- Fatty lamb (or beef)
- 600 cm3 of flour
- 2-3 tablespoonful of oil
- 1 or 2 onions
- 150 g margarine (butter)
- Spices (garlic, pepper etc.)
Prepare an ordinary dough with flour, water and oil. Put it into the fridge. It's time to chop the lamp using two knives or through the meat grinder. Adding finely chopped onion, garlic and other spices like pepper, coriander we have the filling of our sarburma. Then take the dough from the fridge and divide it into 2 balls. Each of them to be rolled into thin ≈80-90 cm ∅ circles and put one on the other to make sarburma more laminated. Currently we can evenly spread the melted margarine and mince on the circles. Carefully wrap the sarburma and curl it like snail's shell. It would be better also to spread the melted margarine on the pan, where the sarburma will be placed. Eventually it leaves to bake sarburma for 30-35 minutes.
